  • 1 cup carrots, sliced
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1/2 cup onion, chopped
  • 2 cups chicken broth
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 cups biscuit mix
  • 2/3 cup milk

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Melt butter in a large skillet over medium heat. Add onion, carrots, and potatoes; cook until softened.
  3. Stir in smoked beef, peas, garlic powder, thyme, salt, and pepper. Sprinkle flour over mixture and stir to combine.
  4. Gradually add chicken broth, stirring until thickened. Remove from heat.
  5. In a separate bowl, mix biscuit mix with milk until a soft dough forms.
  6. Pour beef mixture into a baking dish and drop spoonfuls of biscuit dough on top.
  7. Bake for 25-30 minutes or until biscuits are golden brown.

Notes

  • For a spicier version, add a pinch of crushed red pepper flakes to the filling. The pot pie can be prepared a day ahead
