  • peeled and cubed
  • 4 tbsp butter (for potatoes)
  • ½ cup milk (for potatoes)
  • 2 cloves garlic
  • minced (for potatoes)
  • 2 tbsp fresh parsley
  • chopped
  • 1 tbsp fresh chives
  • chopped
  • Salt and pepper
  • to taste (for potatoes)

Instructions

  1. In a large bowl, combine the ground beef, ground pork, breadcrumbs, milk, egg, chopped onion, minced garlic, Worcestershire sauce, thyme, oregano, and a generous pinch of salt and pepper.
  2. Mix gently with your hands until just combined; over‑mixing can make the meatballs tough.,Form the mixture into 1‑inch meatballs (about 24‑30 total).
  3. Heat a large skillet over medium‑high heat, add a drizzle of oil, and brown the meatballs on all sides, working in batches if necessary.
