- 1 lb (450 g) lean ground beef
- 4 oz (115 g) smoked beef strips

- 1 medium onion

- 2 cloves garlic

- 1 cup (240 ml) crushed tomatoes (no added sugar)
- 2 Tbsp tomato paste
- ¼ cup (60 ml) grape juice
- 1 Tbsp Worcestershire sauce
- 1 tsp smoked paprika
- ½ tsp ground cumin
- ½ tsp vanilla extract
- Salt and freshly ground black pepper

- 1 Tbsp vegetable oil (for sautéing)
- ½ cup shredded cheddar cheese (optional
- for topping)
Instructions
- Preheat the oven to 375°F (190°C).
- While the oven heats, place the prepared bell peppers upright in a baking dish, drizzle lightly with vegetable oil, and set aside.,Heat the remaining vegetable oil in a large skillet over medium heat.
- Add the chopped onion and sauté for 3‑4 minutes until translucent, then stir in the minced garlic and cook for an additional 30 seconds.,Add the ground beef and diced smoked beef strips to the skillet.
- Break the meat apart with a wooden spoon and cook until browned, about 6‑7 minutes, draining any excess fat if necessary.,Stir in the crushed tomatoes, tomato paste, grape juice, Worcestershire sauce, smoked paprika, cumin, vanilla extract, salt, and pepper.
- Reduce the heat to low and let the mixture simmer for 10 minutes, allowing the flavors to meld and the sauce to thicken.,Remove the skillet from heat.
- Spoon the hot meat mixture evenly into each bell pepper cavity, filling them to the top.
- If using, sprinkle shredded cheddar cheese over the filled peppers.,Cover the baking dish with foil and bake for 20 minutes.
