  • 2 chicken breasts, diced
  • 1 cup Greek yogurt
  • 1 cucumber, grated
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon dried dill
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 cup cooked quinoa or rice
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for marinating)

Instructions

  1. Mix Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, salt, and pepper to make tzatziki. Chill.
  2. Marinate diced chicken in olive oil, salt, and pepper for at least 30 minutes.
  3. Cook chicken in a skillet over medium heat until fully cooked.
