Ideal for weeknight meals and family gatherings so

Ingredients

Scale
  • 1 lb chicken, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/4 cup vegetable oil
  • 1/4 cup grape juice
  • 1/4 cup soy sauce
  • 2 tablespoons sugar
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1/2 teaspoon red pepper flakes
  • 2 green onions, chopped
  • Cooked white rice for serving

Instructions

  1. Coat the chicken pieces in cornstarch.
  2. Heat vegetable oil in a large skillet over medium‑high heat and fry the coated chicken until golden and crispy, about 5–7 minutes; remove and set aside.
  3. In the same skillet combine grape juice, soy sauce, sugar, rice vinegar, minced garlic, grated ginger, and red pepper flakes; bring to a simmer and reduce for 2–3 minutes.
  4. Return the fried chicken to the skillet, toss to coat in the glaze, and cook for another 2–3 minutes until heated through.
  5. Serve the chicken over cooked white rice and garnish with chopped green onions.

Notes

  • Use cold water to rinse chicken before coating for extra crispness. For extra heat
  • increase red pepper flakes or add a dash of hot sauce. Leftovers reheat well in a skillet over medium heat.
