  • 2 lbs smoked beef, cut into chunks
  • 4 cups apple cider
  • 4 medium potatoes, peeled and diced
  • 2 cups carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 2 cups beef broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Chopped chives for garnish
  • 2 tbsp butter (for mashed potatoes)

Instructions

  1. Heat oil in the Dutch oven over medium heat and brown the smoked beef chunks on all sides.
  2. Add the chopped onion and minced garlic, sauté until the onion is translucent, about 3–4 minutes.
  3. Pour in the apple cider and beef broth, stir in the carrots, dried thyme, salt and pepper; bring to a boil then reduce to a gentle simmer and cook for 1 hour 30 minutes until the beef is fork‑tender.
  4. Meanwhile, boil the diced potatoes until tender, drain and mash with butter and a pinch of salt until smooth.
  5. Spoon the mashed potatoes onto serving plates, ladle the stew over them, and garnish with chopped chives.

Notes

  • For a richer flavor, add a splash of extra apple cider at the end of cooking. Adjust seasoning after simmering. This stew freezes well
  • store broth and meat separate from mash. Nutrition is approximate.
