Ingredients
- 2 cups cooked chicken, shredded
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups shredded cheese
Instructions
- Preheat the oven to 350°F (175°C).
- Slice the bell peppers and onion.
- In a large bowl combine chicken, peppers, onion, black beans, corn, taco seasoning, and salsa. Mix well.
- Grease a 9‑by‑13 inch baking dish and spread the mixture evenly.
- Top with shredded cheese.
- Bake for 25‑30 minutes until cheese is melted and bubbly.
- Let rest 5 minutes before serving.
Notes
