Ingredients

  • 2 cups cooked chicken, shredded
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups shredded cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Slice the bell peppers and onion.
  3. In a large bowl combine chicken, peppers, onion, black beans, corn, taco seasoning, and salsa. Mix well.
  4. Grease a 9‑by‑13 inch baking dish and spread the mixture evenly.
  5. Top with shredded cheese.
  6. Bake for 25‑30 minutes until cheese is melted and bubbly.
  7. Let rest 5 minutes before serving.

Notes

  • For extra heat
  • add jalapeños or chipotle. Use low‑fat cheese for a lighter version. Leftovers reheat well.
