Ingredients
- 1 pound ground beef
- 1 cup beef broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels, frozen or canned
- 2 cups cooked rice
- 1 can (10 oz) enchilada sauce
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Chopped fresh cilantro for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the ground beef in a skillet until browned; drain excess fat.
- Add beef broth, black beans, corn, cooked rice, enchilada sauce, garlic powder, onion powder, salt and pepper. Stir and simmer for 2 minutes.
- Transfer mixture to a greased 9‑inch baking dish and spread evenly.
- Sprinkle shredded cheese over the top.
- Bake for 20 minutes until cheese is melted and bubbly.
- Garnish with chopped cilantro and serve.
Notes
- For extra heat
- add diced jalapeños. Use leftover rice for convenience. Leftovers reheat well with a splash of broth.
