- 4 medium sweet potatoes
- 2 cups shredded cooked chicken
- 1 cup BBQ sauce
- 1 cup corn
- 1 cup black beans, rinsed and drained
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat oven to 400°F (200°C). Wash sweet potatoes, poke holes, and bake 45‑60 minutes until tender.
- In a bowl combine chicken, BBQ sauce, corn, black beans, garlic powder, onion powder, salt and pepper.
- Slice baked potatoes lengthwise, fluff interior, and spoon filling inside.
- Return to oven 10 minutes, garnish with green onions, and serve.
Notes
- For extra cheese
